EKU student presents food insecurity research at 2023 Posters at the Capitol

EKU student Eric DeMunbrun presented findings and recommendations from his research with EKU Anthropology professor Dr. Amanda Green at the 2023 annual Posters at the Capitol. DeMunbrun, a Social Work major, spent the Fall 2022 semester interviewing EKU students who identify as food insecure. His research contributes to the larger longitudinal study of the long-term impacts of food insecurity on EKU students, supervised by Dr. Green. 

Based on this study as well as his review of relevant literature, DeMunbrun made four policy recommendations for Kentucky elected officials, including screening all EKU students for SNAP eligibility and assisting them in enrollment; increasing campus-wide access to food by bolstering the Colonel's Cupboard food pantry with sattelite locations and food lockers; providing meal scholarships and matching farmers markets benefits for SNAP eligible students; and building nutritional literacy with appropriate outreach to students.
